Pita pizza

Easy, fast and relatively healthy pizza! Serve with a green salad and cucumber on the side 🙂

Ingredients (serves 1)

  • 1 brown Warburton round pita bread
  • 1/3-ish of a jar of pasta sauce (one you would usually use for 2 servings)
  • 1/2 ball of light mozzarella
  • 1/2 pepper (preferably multiple colours)
  • 2 mushrooms
  • 1/3 courgette
  • Pepper and other spices to taste

How to cook 

  1. Preheat the oven to about 180-200 degrees.
  2. If you have it; use a pizza tray and spray it with a bit of oil.
  3. Put your pita bread on top of it and evenly spread out the pasta sauce on it.
  4. Cut up your veggies and put them on your pizza.
  5. Cut the mozzarella ball as thinly as you can and spread it out over the the pizza.
  6. Add extra spices if required (if it is a lot, you might want to move this step forward and do it after step 2)
  7. Put the pizza into your oven for about 10-15 minutes. It is done when the mozzarella is nice and gold 😉
  8. Serve and tuck in!

Additional notes

  • Add some meat: one or two slices of cut up salami, spiced chicken,
  • Be creative with the veggies! Spinach is also a pretty good addition.

Avocado and egg ‘breakfast’ pizza

Have seen variations of this recipe on Pinterest numerous times and decided to try it myself! It is often suggested as a breakfast but in my opinion it could work for any meal really.

Ingredients (serves 1)

  • 1 brown warburton round pita bread
  • 1 small or 1/2 big ripe avocado
  • 1-2 eggs
  • 1-2 slices of salmi
  • 1 handful of spinach
  • Salt, pepper and other spices to taste

 

How to cook 

  1. Ideally toast your pita bread a little (pretty damn hard to do with these round ones so putting it in the oven for a couple of minutes is probably a more realistic way of doing it).
  2. Cut up your avocado and spread it out over the pita bread like a paste.
  3. Sprinkle a bit of salt and pepper over your pita bread with avocado.
  4. Fry your egg the way you like it adding spices and cut up salami bits as you go.
  5. Put the egg on top of your pita bread.
  6. Top it off with some fresh (or steamed) spinach.
  7. Enjoy!

 

Additional notes

  • You can use a small wrap instead of a pita bread.
  • Instead of frying you can scramble your egg or go for sunny side up!
  • Replacing the salami with some bacon could be pretty nice as well!
  • Spinach could of course be replaced by some green salad etc

Lunch idea: Avocado, spinach, egg pita bread.

No elaborate recipe for this one. It is more of an easylunch recipe I can remind myself of and honestly, I think we can all figure out how to pull this together 😉

Ingredients (serves 1)

  • Tomato cup-a-soup.
  • Cucumber.
  • Toasted brown pita bead (I get the round warburton ones from Tesco. You can ‘break them’ through the middle which leaves you with two pita bread halves.
  • Hard boiled egg.
  • Chopped up spinach.
  • Avocado.
  • Salt/pepper to taste.
